There is no way for me to tell you how long it will take or if you'd need stitches or not. I would tend to believe the doctor if they said it would be an easy extraction. Some dentists don't do extractions unless they are very straight forward, and if they thought it would be difficult I'm sure they would let you know. Extractions are never fun for the patient, but don't worry so much, I'm sure everything will work out fine.
